Spinach Salad with Apple Bacon Vinaigrette
5 oz. baby spinach, stems removed, then washed and dried
3 T. The Tasteful Olive Gala Apple dark balsamic vinegar
4 slices center-cut bacon, cooked to a crisp, then finely crumbled, divided
1/2 t. salt
2 T. finely minced shallots, divided
pepper, to taste
1 t. Dijon style mustard
2 T. The Tasteful Olive Bacon infused olive oil
Place spinach in a serving bowl. Place balsamic, half the crumbled bacon, salt, half the shallots, pepper and mustard in a small saucepan over medium heat. Gently warm while whisking. Remove from heat before it reaches a simmer. Allow to cool for a minute, then whisk in the olive oil to emulsify. Adjust seasoning to taste. Gently dress the spinach with the warm vinaigrette and tip with the remaining crumbled bacon and shallots. Serve warm.
