Apple-Cranberry Salad

 

Make the Balsamic Vinaigrette in a medium bowl by combining:

     ½ C The Tasteful Olive’s Raspberry balsamic vinegar

     ½ C The Tasteful Olive’s mild or medium intensity olive oil

6 crisp apples (Fuji, Gala or Granny Smith)

2 C chopped celery                          1 C sweetened dried cranberries

1 C glazed walnut pieces               2 4-oz jars sliced pimentos, drained

2 5-oz pkg mixed baby greens    1-1/2 C finely crumbled Feta cheese

Cut up and add to vinaigrette:

Apples, peeled and cut into 2” cubes. (Mix each cube into vinaigrette to prevent them from turning brown). Celery pieces, pimentos and cranberries, then toss well. Cover and refrigerate several hours until serving time.

*Serving time; arrange greens on platter or plates. Top with the apple-cranberry mix. Sprinkle cheese and walnuts on top. Serves 12.
