Apple Cranberry Salad
1/4 c. The Tasteful Olive Raspberry dark balsamic vinegar
1/4 c. The Tasteful Olive mild or medium intensity extra virgin olive oil
Salt and pepper, to taste
2 crisp apples (Fuji, Gala, or Granny Smith suggested), peeled and diced into 2" cubes
1 c.celery, finely chopped
1/2 c. sweetened dried cranberries
1/2 c. glazed walnut pieces
1, 4 oz. jar sliced pimentos, drained
5 oz. mixed greens
3/4 c. feta cheese, crumbled
In a large salad bowl whisk together the balsamic, oil, salt, and pepper. Add diced apples, celery, cranberries, walnuts, and pimentos and toss to coat, making sure each apple piece is fully coated to avoid browning. Refrigerate for 2 hours.
To serve, arrange the greens on a platter or plate, top with apple mixture, and garnish with feta.
