Grilled Summer Veggies
1 zucchini squash
1 yellow squash
1 red pepper
1 green pepper
2 yellow or red onions
1 small head cauliflower
1/3 c. The Tasteful Olive mild intensity extra virgin olive oil
1/4 c. The Tasteful Olive Pomegranate dark balsamic vinegar (or vinegar of your choice)
1 T. Chicago steak seasoning (available at The Tasteful Olive)
Salt & pepper, to taste
Cut all veggies to approximate same sizes. Any assortment of veggies can be used to make it colorful. Place all cut up veggies in a large bowl. Toss with olive oil, vinegar, steak seasoning, salt, and pepper. Transfer to grill pan and grill with cover closed on med heat for 5 min. Stir and cook for 5 more minutes. Stir again and cook another 5 min. Test for doneness and cook more if desired. Enjoy!
