Brie and Fig Grilled Cheese 

8 Slices Sourdough Bread

3 T. Fig Jam (Terrapin Ridge Strawberry Fig Jam from The Tasteful Olive is recommended)

½ lb. brie cheese, cut into 8 long even slices

2 T. The Tasteful Olive Tuscan Herb infused extra virgin olive oil

Heat non-stick or any large griddle over medium heat. Lay bread slices in pairs on the work surface. Spread fig jam equally onto 1 slice in each pair. Lay two slices of cheese over the preserves, folding slices evenly with edges of the bread. Cover with remaining bread slices and spread half of the olive oil on the slices. Invert sandwiches into the hot pan and spread the remaining olive oil on the tops. Cook, turning once or twice, until both sides are golden and crisp, and cheese is melted.
