Grilled Radicchio and Hearts of Romaine with Shaved Pecorino
1/3 c. The Tasteful Olive Tuscan Herb infused olive oil
1/4 c. The Tasteful Olive Grapefruit white balsamic vinegar
6 garlic cloves, chopped
1/2 t. crushed red pepper
4 hearts of romaine, cut in half lengthwise
4 large heads of radicchio, each cored and quartered
1/2 c. shaved pecorino cheese (can also use shaved parmesan cheese)
Whisk oil, vinegar, garlic and crushed red pepper in a large bowl. Add radicchio and romaine and toss to coat. Heat grill to medium. Drain marinade into a small bowl. Place radicchio and romaine hearts on the grill; sprinkle with kosher salt & fresh cracked pepper. Grill until edges crisp and slightly charred, turning occasionally, about 4-6 minutes. Transfer to serving platter. Drizzle with reserved marinade and sprinkle with cheese shavings.
