Whipped Cheese with Cherry & Harissa
5 oz. log goat cheese
5 oz. whipped cream cheese
2 T. The Tasteful Olive Harissa infused olive oil, divided
1/2 t. dried thyme
1/4 t. Himalayan pink salt (available at The Tasteful Olive)
1/4 t. freshly ground black pepper
1-2 T. The Tasteful Olive Cherry dark balsamic vinegar
1/4 c. pepitas, toasted (could also use chopped pistachios)
1/3 c. dried cherries, roughly chopped
Fleur de Sel (available at The Tasteful Olive) and freshly cracked black pepper, to taste
Crackers, for serving
To the bowl of a food processor add the goat cheese, cream cheese, 1 T. Harissa infused olive oil, and dried thyme. Process until smooth, scraping down the sides as necessary. Spread the cheese mixture on a serving plate and allow it to sit for 15 minutes to allow the thyme to soften and release its flavor.
Drizzle the cheese with the remaining 1 T. Harissa oil and 1-2 T. Cherry dark balsamic vinegar, to taste. Sprinkle the pepitas and cherries over the top then top with salt and pepper, to taste. Serve with crackers of choice.

If you don’t have a food processor, feel free to use a hand mixer.

The cheese mixture can be blended ahead of time and refrigerated. Bring to room temperature before serving, then add the toppings.
