Tuscan Bean and Sausage Soup
2 T. The Tasteful Olive Tuscan Herb infused olive oil (plus additional for serving)
1 lb. ground Italian sausage
1 large shallot, diced
2 cloves garlic, minced or grated
1 T. The Tasteful Olive Sherry wine vinegar
2, 15 oz. cans petite diced tomatoes, undrained
2, 15 oz. cans black beans, rinsed and drained
2, 15 oz. cans white beans, rinsed and drained
4 c. beef broth
2 t. dried basil
2. t. sea salt
1 t. black pepper
Grated parmesan cheese, for serving (if desired)
Heat olive oil in medium sized pan over medium heat. Brown sausage, shallot, and garlic for approximately 7-10 minutes, or until the sausage is cooked through and lightly browned. Add the balsamic vinegar and cook another 2-3 min. Transfer to crock pot. Stir in remaining ingredients and cook on low 6-8 hours or high 3-4 hours. Drizzle Tuscan Herb olive oil on top before serving. Garnish with fresh parmesan cheese.
