Easy Chicken Sausage, Kale & Lentil Soup
2 T. The Tasteful Olive Basil pressato olive oil
1 onion, diced
1/2 c. celery, chopped
1 c. carrots, chopped
3-4 cloves garlic, chopped
1 t. cumin
1/4-1/2 t. dried rosemary
1/4-1/2 t. dried thyme
Dash of red pepper flakes
Salt and pepper, to taste
4 links fully cooked chicken sausage, chopped
1/2 c. lentils
1 (28 oz.) can diced tomatoes
4 c. chicken broth
2 large handfuls of kale
Fresh (or dried) parsley to garnish
1 1/2 T. The Tasteful Olive Vinoso red wine vinegar
Heat olive oil in a pot to medium heat. Add onions and saute until translucent. celery, carrots, and garlic and saute about 5 minutes. Add cumin, rosemary, thyme, red pepper flakes, salt, and pepper. Add in chicken sausage, lentils, diced tomatoes, and broth. Bring to a boil and then simmer approximately 30-40 minutes until vegetables are tender. Add 2 large handfuls of kale during last 5 min. Garnish with parsley and stir in red wine vinegar.
