4 links fully cooked chicken sausage, chopped
½ C lentils
1 onion, diced
½ C celery, chopped
1 C carrots, chopped
3-4 cloves garlic, chopped
1 28 oz can diced tomatoes
4 C broth
1 tsp cumin
¼-1/2 tsp dried rosemary & thyme
Dash of red pepper flakes
Fresh (or dried) parsley to garnish
2 T The Tasteful Olive’s Basil olive oil
2 large handfuls of kale
1 ½ T The Tasteful Olive’s Moscatel Barrel Aged Red balsamic vinegar
Heat basil olive oil in a pot to medium heat. Add onions and saute until translucent. Add garlic, celery and carrots and saute about 5 min. Add cumin, rosemary, thyme, red pepper flakes, and salt and pepper (to taste). Add in chicken sausage, lentils can of diced tomatoes, broth. Bring to boil and then simmer approximately 30-40 min until vegetables are tender. Add 2 large handfuls of kale during last 5 min. Garnish with parsley. Enjoy!
