Tuscan Herb Linguini
1 lb. linguini
1/4 c. The Tasteful Olive Tuscan Herb olive oil
4 medium tomatoes, chopped
4 cloves garlic, minced
2 t. fresh oregano, chopped
1/4 c. pine nuts, toasted
Sea salt, to taste
6 oz. feta cheese, crumbled
Cook pasta according to package directions and drain.
While pasta is cooking, place a large skillet on medium heat and add olive oil. Add tomatoes, garlic, oregano and pine nuts, then salt to taste. Cook for 5 minutes. Add pasta to skillet and toss. Place in serving dish and sprinkle with feta crumbles. Makes 4-6 servings.
