Tomato and Cucumber Salad
2 T. The Tasteful Olive Italian Lemon infused olive oil
2 T. The Tasteful Olive Oregano white balsamic vinegar
1 large cucumber, peeled, seeded, and chopped into bite sized pieces
1 pint cherry tomatoes, halved
1-2 large green onions, thinly sliced
Salt and pepper, to taste
In a large bowl, whisk the oil and vinegar together to emulsify. Add vegetables and toss to evenly coat then season with salt and pepper to taste. Serve cold. Feel free to adjust the ratio and quantity of oil and vinegar to your taste preferences.
