Cucumber Pickle Salad 

1/4 c. thinly sliced red onion 

2 T. The Tasteful Olive Vinoso red wine vinegar 

2 T. The Tasteful Olive Dill infused olive oil 

1 T. apple cider vinegar 

1 large dill pickle, diced PLUS 1 T. pickle juice 

1 t. garlic powder 

1 t. dried dill weed 

2 English cucumbers, sliced into ¼' to ½' thick rounds 

Salt and Pepper 

Put the onion and red wine vinegar in a small pot and bring to a simmer. Allow to simmer at medium low heat for 3-4 minutes. Allow to cool completely, then refrigerate until ready to use.   

In a small bowl, whisk together the the olive oil, apple cider vinegar, pickle juice, garlic powder, and dill weed.  

When ready to serve arrange the cucumber rounds in pinwheels in a single layer on a serving platter and season with salt and pepper. Top with the dressing, diced dill pickles, and pickled red onions. Serve cold.
