Strawberry Mozzarella Bruschetta

8 slices sourdough bread (such as The Sourdough Yogi plain sourdough, available at The Tasteful Olive)
1 large whole clove garlic
2 T. The Tasteful Olive mild or medium intensity extra virgin olive oil 
8 slices mozzarella cheese
16 strawberries, diced
2 T. The Tasteful Olive Fig dark balsamic vinegar

Preheat the oven to 350 degrees. Cut garlic in half and rub the cut side on the slices of French bread, then drizzle with the olive oil. Top each slice with mozzarella and bake until the cheese has melted. While the cheese is melting, mix the strawberries and balsamic vinegar. Once cheese bread is done, remove from oven and immediately top with the strawberry/balsamic vinegar mixture. Serve warm.
