Garlic and Herb Marinated Mozzarella Bites

3/4 c. The Tasteful Olive extra virgin olive oil of choice (unflavored, rosemary, basil, Tuscan herb, and Herbs de Provence would all be fantastic)

6 garlic cloves, thinly sliced

2 T. chopped fresh herbs (basil, thyme, oregano and/or parlsey)

1 t. black or rainbow peppercorns (available at The Tasteful Olive)

Peel of half, a lemon thinly sliced

1 or 2 Bay leaves

1 t. The Tasteful Olive Traditional dark balsamic vinegar

Crushed red pepper flakes, to taste

Salt, to taste

1 lb. fresh mozzarella cut into small chunks (or use mozzarella balls)

Heat olive oil and garlic in a small sauce pan over medium heat until bubbling gently. Remove from heat and allow to cool for a few minutes. Stir in herbs, peppercorns, lemon slices and bay leaves. Add vinegar, red pepper flakes and salt to taste. Pour mixture over cheese and transfer to air tight container. Refrigerate and allow to marinate over night or up to two weeks. Bring to room temperature before serving.
