Strawberry Fig Streusel Bars

1 1/3 c. unsalted butter, cut into cubes

1 c. light brown sugar, divided

2 large egg yolks

3/4 t. pink Himalayan sea salt (available at The Tasteful Olive)

3 c. all purpose flour

3/4 jar Terrapin Ridge Farms Strawberry Fig Jam (available at The Tasteful Olive, from an 11 oz. jar)

Line a 13X9 inch baking dish with foil and spray with cooking spray. In the bowl of a food processor pulse together the butter and 3/4 c. of the brown sugar until combined. Pulse in egg yolks and salt until smooth. Add flour and pulse until the dough comes together but is still crumbly. Transfer about 2 c. of the dough to the prepared pan, saving the rest for the streusel topping. With your hands, press the mixture evenly into the bottom of the pan. Refrigerate. To the remaining streusel topping add the remaining 1/4 c. brown sugar and pulse to combine. Set aside while the crust bakes.

Preheat the oven to 325. Once the oven is hot, bake the crust for 20 minutes, until the crust begins to set but is not brown on the edges. Remove from the oven and increase the temperature to 350. Spread the Strawberry Fig Jam evenly over the hot crust. Crumble the streusel over the filling. Bake 20-25 minutes, until the streusel is golden and set. Allow the pan to cool 1-2 hours. When the bottom of the pan is cool, carefully lift the bars from the pan using the foil to lift and transfer to a cutting board. Slide the foil out, cut into bars, and enjoy!
