Pumpkin Oatmeal Olive Oil Cookies - Mummy Cookies

Serving: about 12 cookies

 

Cookie ingredients:

1 cup pumpkin puree

1 cup oats

1 cup whole wheat flour

1/3 cup maple syrup or honey

1/4 cup mild EVOO

1/2 tsp baking soda

1/2 tsp salt

1 tsp pumpkin pie spice

 

Icing ingredients: 

1/2 cup icing sugar

1 tbsp milk

1 tsp Maple Balsamic vinegar

 

Optional decoration: candy eyeballs 

 

Instructions:

Preheat the oven to 350 F and line a baking sheet with parchment paper. Place all the ingredients in a bowl and mix until well combined. Scoop about a tablespoon of the mixture into the baking sheet and slightly flatten each cookie with the back of a spoon. Bake for 15 minutes. 

Meanwhile, prepare the icing. Whisk together all the ingredients until smooth. 

Once the cookies have cooled, drizzle the icing over them. If you are decorating them for Halloween, use some of the icing to glue the eyeballs on the cookie. Then, drizzle the icing in horizontal strokes to make it look like a mummy.
