Pumpkin Oatmeal Olive Oil Cookies - Mummy Cookies

1 c. pumpkin puree

1 c. old fashioned oats

1 c. whole wheat flour

1/3 c. maple syrup or honey

1/4 c.The Tasteful Olive mild extra virgin olive oil (could also use Blood Orange infused, if desired)

1/2 t. baking soda

1/2 t. salt

1 t. pumpkin pie spice

 

Icing ingredients: 

1/2 c. powdered sugar

1 T. milk

1 t. Maple Balsamic vinegar

Preheat the oven to 350 and line a baking sheet with parchment paper. Place all the cookie ingredients in a bowl and mix until well combined. Scoop about a tablespoon of the mixture onto the baking sheet and slightly flatten each cookie with the back of a spoon. Bake for 15 minutes. 

 

Meanwhile, prepare the icing by whisking the powdered sugar, milk, and balsamic until smooth.

 

Once the cookies have cooled, drizzle the icing over them. If you are decorating them for Halloween, use some of the icing to glue the eyeballs on the cookie. Then, drizzle the icing in horizontal strokes to make it look like a mummy.
