Espresso Cookies

Cookie ingredients:

1 1/2 c. unsalted butter 

1 c. plus 1 T. white sugar

5 T. + 1 t. The Tasteful Olive Espresso dark balsamic vinegar

1 large egg

1 T. + 1 t. The Tasteful Olive Roasted Walnut gourmet oil

2 2/3 c. all-purpose flour

2 t. baking soda

1 t. ground cinnamon

1 t. salt

Frosting ingredients:

2 2/3 c. powdered sugar

1 c. Espresso Balsamic, reduced to ½ cup (simmer in a saucepan over medium heat for 5 min. then cool)

Mix butter, sugar, balsamic, egg, and walnut oil with hand mixer until combined. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt then add to wet ingredients, mixing to combine. Form portions into a ball and bake for 11-15 minutes until done. For the frosting, combine the powdered sugar with the espresso balsamic then ice cookies!
