Espresso Cookies
Ingredients: Serves: 1 dozen
1 ½ cups butter (or 1 cup butter + 1/3 cup mild EVOO)
1 cup plus 1 T white sugar
5 T + 1 tsp The Tasteful Olive Espresso Balsamic
1 egg
2 2/3 C all-purpose flour
2 tsp baking soda
1 tsp ground cinnamon
1 T + 1 tsp The Tasteful Olive Toasted Almond Oil
1 tsp salt
Frosting:
2 2/3 C powdered sugar
1 C Espresso Balsamic, reduced to ½ cup
Directions:
Mix all the wet ingredients as listed with hand mixer. Mix dry ingredients and add to wet ingredients. Form portions into a ball and bake for 11-15 minutes until done. Makes about a dozen cookies.
