Orange Rosemary Olive Oil Cookies
2 c. flour
1/2 t. baking powder
1/2 t. baking soda
1/4 t. flaked sea salt, crushed
1 c. sugar
3 T. The Tasteful Olive Blood Orange infused extra virgin olive oil
2 T. The Tasteful Olive Rosemary Pressato extra virgin olive oil
3 mandarin oranges, zested
2 large eggs
1 t. vanilla extract
2/3 c. sugar in the raw
Preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper. In a medium sized bowl, whisk the flour, baking powder, baking soda, and salt. In a large bowl, beat the sugar, olive oils, and the zest of 2 mandarin oranges until smooth. Add the eggs and vanilla. Stir until combined. Fold in the flour mixture until combined.
In a small bowl, use your fingers to combine the sanding sugar with the zest of the remaining mandarin orange. Using your fingers to combine these 2 ingredients will help bring out the essential oils of the mandarin. Using a 1 1/2 T. cookie scoop, scoop out dough and toss in sugar mixture. Place each scoop on the parchment lined sheets (at least 2 inches apart) and bake for 11 minutes. Let cookies cool for 2-3 minutes before transferring to a cooling rack.
