Ingredients
2 C. Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Flaked Sea Salt, crushed
1 C. Sugar
1/3 C. Orange Rosemary Olive Oil (or 2/3 Orange olive oil and 1/3 Rosemary Olive oil)
Zest from 3 Mandarin Oranges
1 tsp. Vanilla
2 Eggs
2/3 C. Sanding Sugar or Sugar in the Raw
Instructions
Preheat oven to 350 degrees.
Line 2 large baking sheets with parchment paper.
In a medium sized bowl, whisk the flour, baking powder, baking soda, and salt.
In a large bowl, beat the sugar, olive oil, and the zest of 2 mandarin oranges until smooth. Add the eggs and vanilla. Stir until combined.
Fold in the flour until combined.
In a small bowl, use your fingers to combine the sanding sugar with the zest of the remaining mandarin orange. Using your fingers to combine these 2 ingredients will help bring out the essential oils of the mandarin.
Using a 1.5 tablespoon cookie scoop, scoop out dough and toss in sugar mixture. Place each scoop on the parchment lined sheets (at least 2 inches apart) and bake for 11 minutes. Let cookies cool for 2-3 minutes before transferring to a cooling rack.
