Olive Oil Chocolate Chunk Cookies
1 3/4 c. flour
1 t. baking soda
1/2 t. salt
1/2 c. The Tasteful Olive robust extra virgin olive oil
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg + 1 egg yolk
1 T. vanilla extract
1 1/2 c. chocolate chunks
Fleur de Sel for finishing (available at The Tasteful Olive)
Preheat oven to 350. Line a large baking sheet with parchment or quilon paper.
In a medium sized bowl, whisk together the flour, baking soda, and salt and set aside.
In a large bowl, whisk the olive oil and sugars together until the mixture resembles wet sand. Add in the eggs and whisk for 1 minute. Stir in vanilla, mixing until combined. Gradually fold in the flour mixture, then the chocolate chunks.
Using a 1-2 tablespoon cookie scoop, drop the cookie dough onto your baking sheet, leaving at least 2 inches of space between each cookie. Sprinkle the tops of each cookie with a pinch of fleur de sel. Bake for 9 minutes, until the edges are beautifully golden brown. Cool cookies on your baking sheet for 4 minutes before transferring them to a wire rack to cool completely.
