Pineapple Dip with Peppers
Ingredients: Serves: 3 cups
1 C bell peppers, chopped
1/2 C light sour cream
1/2 C light mayo
8 oz softened cream cheese, reduced fat
1/2 fresh pineapple, chopped very fine (leave juice)
1 tsp lime peel, grated
1 tsp juice from the lime
1/8 tsp Sea Salt (unflavored)
2 T gr onion, thinly sliced
2 T fresh cilantro or parsley, coarsely chopped
2 tsp Pablano or other hot pepper (finely chopped)
1 T Tasteful Olive's Pineapple Balsamic Vinegar (or more to taste)
Veggie Pieces
Crackers of choice
Directions:
Take a small bowl and combine all ingredients except veggies and crackers. Using mixer, beat at medium speed and scrape bowl often until mixed well. Cover, refrigerate at least 1 hour. Serve in a small bowl on platter with veggies and crackers.
