Parmesan Crusted Baked Fish

2 lb. Tilapia or other white fish of choice

Salt, to taste

Pepper, to taste

3/4 c. freshly grated Parmesan cheese

1/2 c. bread crumbs

4 T. unsalted butter, melted

2 T. The Tasteful Olive infused olive oil (such as Blood Orange, Lemon or Persian Lime)

Preheat the oven to 400 degrees. Line a baking sheet with foil or parchment paper and spray with olive oil.

Place fish on the prepared baking sheet and season with salt and pepper.

In a bowl, mix the Parmesan with the bread crumbs. Add the melted butter and olive oil and stir well until crumbly and moist throughout. Sprinkle over the fish filets.

Bake for approximately 15-20 minutes or until the fish is flaky in the center and the topping is golden. Let stand 5 minutes before serving.
