Baked Goat or Feta Cheese Pasta
1 lb. short pasta of choice (penne, rigatoni, fusilli), cooked according to package instructions (save 1 c. of pasta cooking water prior to draining)
2 pints of grape tomatoes
1/3 c. The Tasteful Olive Tuscan Herb infused olive oil
Salt, to taste
Pepper, to taste
8–10 oz. goat cheese log OR feta cheese block
Handful of fresh basil
2 T. The Tasteful Olive Fig dark balsamic vinegar
Preheat the oven to 400 degrees. Place the tomatoes into a baking pan and drizzle them with Tuscan Herb olive oil, salt and pepper.
Toss them around and add the goat cheese or feta block in the middle of the pan.
Bake in the oven for about 20 minutes or until the tomatoes burst and the cheese is soft.
Add the fresh basil and the fig balsamic. Stir in the cooked pasta and give it a good mix, adding reserved pasta water if it is too thick.
