Orange and Rosemary Chicken Bites
Zest of one lemon
1/4 c. fresh lemon juice
1/4 c. The Tasteful Olive Rosemary pressato olive oil
2 t. orange zest
2 t. Dijon mustard
1 clove garlic, minced
1/2 t. each sea salt and fresh-ground black pepper
1-1/4 lb. boneless skinless chicken breasts, cut in 1” cubes
20-24, 4-inch wooden skewers, soaked
Whisk together lemon zest, lemon juice, olive oil, orange zest, Dijon mustard, garlic, salt, and pepper; let rest 10 minutes. Place chicken pieces in a non-metallic container; add marinade. Cover and refrigerate 2 to 2-1/2 hours, stirring at least once.
Drain chicken; discard marinade. Thread 2 chicken pieces on each skewer. Broil, grill or cook in a stove top grill pan 4-5 minutes per side or until cooked through. Serve immediately.
