Maple Orange Chicken

2 T. The Tasteful Olive mild or medium extra virgin olive oil

salt

freshly cracked pepper

1 lb. chicken (about 4 chicken tenders or 2 chicken breasts)

1/4 c. The Tasteful Olive Bourbon Maple dark balsamic vinegar 

1 T. orange marmalade

juice of one lemon

1/4 c. parsley, finely chopped (for garnish)

green onions, finely chopped (for garnish)

Heat oil in nonstick pan over medium heat.  When oil is hot, add chicken and season with salt and pepper.  Cook until chicken is browned and done throughout.  Transfer the chicken to a platter. Place the pan back on the heat. Add the balsamic and whisk in the marmalade.  Summer over low heat until sauce thickens, about 1-2 minutes. Return chicken to the pan and add the lemon juice to the sauce. Turn chicken to coat in the sauce. Dust with parsley and scallions.
