Marinated Fig Grilled Chicken with Apple Salad
2, 4 oz. chicken breasts
1 T. The Tasteful Olive Fig dark balsamic vinegar
1 T. The Tasteful Olive Mushroom & Sage infused olive oil
1 t. salt, divided
5 oz. mixed greens
1 medium apple of choice, diced
1/4 c.sliced almonds, walnut pieces, or pecan pieces, toasted
2 T. The Tasteful Olive Smeralda white or Gala Apple dark balsamic vinegar (or a combination of the two)
2 T. The Tasteful Olive mild intensity olive oil
Place the chicken breasts in a zip top bag. In a small bowl, whisk together the fig balsamic, mushroom and sage olive oil, and 1/2 t. salt. Pour over the chicken in the bag and allow to marinate for 30 minutes. Grill on medium heat until the temperature reaches 160 degrees on the thickest part of the chicken breast. Rest for 5 minutes, then slice.
Place the mixed greens, apple, and nuts in a large bowl and top with the sliced chicken. In a small bowl, whisk together the apple balsamic, mild olive oil, and remaining 1/2 t. salt. Pour over salad and toss to combine.
