Garlic Mashed Potatoes
4-5 russet potatoes, scrubbed, peeled, and cut into 1" cubes
1/2 c. The Tasteful Olive garlic butter infused olive oil (could also use The Tasteful Olive butter infused olive oil)
1 c. chicken broth
Salt and Pepper, to taste
Place potatoes in a large pot and fill with cold water, then cover and bring to a boil. Once the potatoes are boiling, tilt the lid and let them cook for 20 minutes. Test with a fork to make sure they are tender, then drain and return to the pot. Add the oil, chicken broth, salt, and pepper and mash with a potato masher or blend with a hand mixer. Serve immediately or place in a crock pot on keep warm until ready to eat.
