1 T unsalted butter 1 t lemon zest
1/8 t ground ginger 12 oz fresh cranberries
¼ of a sweet onion (cut in ¼ in pieces) 2 green onions sliced
1 dash lemon juice ¾ c sugar
¼ t freshly ground black pepper ½ c chopped and toasted pecans
1 ½ T The Tasteful Olive’s Mulled Cider vinegar
1 ½ T The Tasteful Olive’s Cranberry Pear balsamic vinegar
½ t The Tasteful Olive’s Pink Himalayan salt
1 pear (peeled, cored, and cut into ¾ in match sticks)
Directions:
In large skillet melt butter on medium heat. Add in onions and cook until translucent (usually about 2 mins). Sprinkle in ginger and stir to combine. Pour in apple juice and cranberry pear balsamic. Simmer until liquid is almost fully absorbed (about 3 mins). Add in sugar, lemon zest, cranberries, and ½ c water. Heat on medium and bring to a simmer. Cook for approximately 20 mins until the cranberries start to burst and create a red syrupy texture. Transfer to a separate bowl and let cool.
While cooling, take pecans and place in a skillet to heat on medium/low heat and stir for just a few minutes (they’ll start to become fragrant). Take cooled mixture and add in pecans, pears, green onions, salt and pepper. Stir together and allow to sit in the fridge for at least 30 minutes before serving.
Serve with your favorite soft cheese and crackers, tortilla chips, or a dish of your choice and enjoy!
