Cranberry Pear Relish
1 T. unsalted butter
1/4 medium sweet yellow onion, cut in ¼ in pieces
1/8 t. ground ginger
1 1/2 T. The Tasteful Olive Gala Apple dark balsamic vinegar
1 1/2 T. The Tasteful Olive Cranberry Pear white balsamic vinegar
3/4 c. white sugar
1 t. lemon zest
12 oz. fresh cranberries
1/2 c. water
1/2 c. chopped pecans
1 pear, peeled, cored, and cut into ¾ in match sticks
2 green onions, sliced
1/2 t. Himalayan pink salt (available at The Tasteful Olive)
1/4 t. freshly ground black pepper
In a medium skillet melt butter on medium heat. Add in onions and cook until translucent (about 2 minutes). Sprinkle in ginger and stir to combine. Pour in apple balsamic and cranberry pear balsamic. Simmer until liquid is almost fully absorbed (about 3 minutes). Add in sugar, lemon zest, cranberries, and water. Heat on medium and bring to a simmer. Cook for approximately 20 minutes until the cranberries start to burst and create a red syrupy texture. Transfer to a bowl and allow to cool.
While cooling, take place the pecans in a skillet and heat on medium/low heat and stir for just a few minutes (they’ll start to become fragrant). Add pecans, pears, green onions, salt and pepper to the cooled cranberry mixture. Stir together and allow to sit in the fridge, covered, for at least 30 minutes before serving.
Serve with your favorite soft cheese and crackers.
