Simple Chicken Tacos
For the marinade:
2 lb. chicken thighs or breasts, cut into cubes or strips
2 jalapenos, diced
Juice of 1 lime
1/2 c. The Tasteful Olive Persian Lime infused olive oil
1/2 c. The Tasteful Olive Cilantro Garlic white balsamic vinegar
a handful of fresh cilantro, chopped
For Topping:
1 Red onion, sliced
1 white onion, sliced
2 Bell peppers, sliced
Taco seasoning, if desired
Pico de Gallo
Marinate the chicken for 30 min. to 2 hours with the rest of the marinade ingredients. Meanwhile, saute the onions and peppers in a skillet until soft and charred, then remove to a plate and set aside. Once the chicken is done marinating, saute it in the same skillet with your favorite taco seasonings. TIP: don't add all the juices from the marinade in at the beginning or they might burn because of the natural sugar in the balsamic. Pour them in during the last minute so it will caramelize instead. Once the chicken is cooked, add the onions and peppers back to the pan and give it a stir. Warm the tortillas over a hot pan and assemble your tacos!
