Rosemary and Strawberry Balsamic Marinated Pork Roast
1/4 c. The Tasteful Olive medium intensity extra virgin olive oil
1/4 c. The Tasteful Olive Strawberry dark balsamic vinegar
1 t. soy sauce
2 t. granulated garlic
2 T. dried shallots (such as Penzey's air dried shallots)
1 t. red pepper flakes
1 T. dried rosemary (optional, to taste)
1.5 lbs pork loin roast
Preheat the oven to 350F. Place all marinade ingredients in a bowl and whisk to combine. Place marinade with the pork into a spill-proof container (such as a zip top bag) and evenly coat the pork, making sure all sides are covered by the marinade. Let pork marinate in the refrigerator for between 1-2 hours, turning about half way through so all sides marinate evenly. Place pork onto a baking sheet lined with parchment paper. Place into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 30-45 minutes. An instant-read thermometer inserted into the center should read 145 degrees.
