Quick Summertime Beef Saute w/Kale

2 T. The Tasteful Olive robust intensity extra virgin olive oil

1 c. onion medley (red, white, and green onions) cut in 2" strips

12 oz. beef sirloin, cut into 1" cubes

1 clove garlic, chopped

1 t. Italian Seasoning

Kosher salt, to taste

Pepper, to taste 

1/3 c. sundried tomato strips

1 1/2 c. fresh kale, stems removed, chopped

2 T. The Tasteful Olive Traditional dark balsamic vinegar 

1 T. fresh parsley, chopped

Heat a large skillet over medium high heat. Add oil and onion medley and saute for about 2 minutes. Remove the onions from the skillet and set aside.

Add beef cubes to skillet and begin to brown them, then add garlic and spices. Cook and stir until beef has browned. Add tomato strips, cook 1 more minute, then add kale and keep tossing until kale has wilted and softened. Add balsamic vinegar to skillet and simmer to reduce. Return onions to skillet, garnish with parsley, and serve.
