Fabulous Beef Fajitas!
1 lb. flank steak
1 t. ground cumin
1 t. fajita seasoning (or taco seasoning)
salt
black pepper
1/4 c. The Tasteful Olive Chipotle infused olive oil, divided
2 bell peppers, sliced (red or yellow preferred)
8 small flour tortillas
1 ripe avocado, sliced or diced
sour cream
hot sauce
shredded cheese
Place the oven rack on the top ring and preheat the broiler to high. On a baking sheet, season meat with cumin, fajita seasoning, salt, pepper, and 2 T. olive oil. Place the meat in the oven for 4 minutes, remove, turn over, and continue cooking for 4 more minutes. Remove from the oven and allow to rest for at least 5 minutes. Slice against the grain to serve.
While the meat is cooking, saute the bell peppers in a skillet with the remaining olive oil.
Serve the meat and peppers in the flour tortillas along with toppings!
