Persian Lime Chicken Scampi

6 T. The Tasteful Olive Persian Lime infused olive oil 

3 cloves garlic, minced

1 t. red pepper flakes

2 T. The Tasteful Olive medium intensity extra virgin olive oil

1 chicken breast, cut into 1" square pieces

salt, to taste

pepper, to taste

2 oz. dry white wine

1 T. butter

In skillet, mix the Persian Lime olive oil, garlic and red pepper flakes and turn heat to medium. Let garlic and red pepper start to flavor the oil. Turn to low.

In second skillet, add medium intensity olive oil and heat over medium high heat. Sprinkle chicken with salt and pepper on both sides and saute in the oil until done all the way through (6-8 min).

Once chicken is done, remove from the skillet and put it in with the Persian Lime olive oil. Add the white wine and stir to make sure the chicken is coated.

Cook for another minute and add the butter. Stir until butter is melted and chicken is coated in the sauce.
