Mixed Greens with Persian Lime and Pomegranate Vinaigrette
1 T. whole grain mustard
1 T. honey
1 t. fresh thyme
1 garlic clove, minced
Salt & pepper, to taste
Zest of 1 lemon
Juice from 1/2 lemon
2 T. The Tasteful Olive Persian Lime infused olive oil
2 T. The Tasteful Olive’s Pomegranate dark balsamic vinegar
5 oz. spring mix or mixed greens
1 pear, thinly sliced or small dice
2 oz. candied pecans
4 oz. feta cheese crumbles
In a bowl, whisk the whole grain mustard, honey, thyme, garlic, salt, pepper, lemon zest, lemon juice, olive oil, and balsamic vinegar together until emulsified. Place the greens in a large serving bowl and toss with the vinaigrette. Plate the salad then top with the pear, candied pecans, and feta cheese. Serve immediately.
