Persian Lime Sugar Cookies
2 3/4 c. flour
1/4 t. salt
2 t. cream of tartar
1 t. baking soda
1 1/2 c. sugar
3/4 c. The Tasteful Olive Persian Lime olive oil
2 large eggs
1 t. vanilla extract
1 T. lime juice
Decorative sugar crystals, for topping (if desired)
Preheat oven to 350 degrees. In a medium bowl, sift together flour, salt, cream of tartar and baking soda. Set aside. In a large bowl, mix the sugar and olive oil. Blend in eggs, one at a time. Add vanilla and lime juice. Add flour mixture, one cup at a time, blending well after each addition. Cover dough with plastic and refrigerate one hour. Lightly grease cookie sheet. Shape one tablespoon of dough into a ball, place on cookie sheet, and flatten with bottom of a glass. Sprinkle sugar crystals on top of cookies (if using). Bake for 12-14 minutes, just until set and lightly golden in color. Makes about 5 doz. large cookies.
