Fall Cornucopia Salad
5 oz. mixed greens
2 T. The Tasteful Olive Roasted Walnut gourmet oil
1 T. The Tasteful Olive Vinoso red wine vinegar
1 T. The Tasteful Olive Smeralda Apple white balsamic vinegar
Salt and pepper, to taste
3 green onions, thinly sliced
1/3 c. dried cranberries
4 oz. blue cheese, crumbled
1/4 c. almonds, toasted (could also use pecans or walnuts)
1/2 granny smith apple, diced
Place greens in a bowl. In a separate small bowl, whisk together oil, wine vinegar and balsamic vinegar until thick. Add salt and pepper, if desired. Toss greens with dressing. Garnish the salad with green onion, dried cranberries, blue cheese crumbles, apple, and almonds.
