Fall Cornucopia Salad

(serves 4-6)

1 package mixed greens

Small handful chopped green onions

Small handful of dried cranberries

Blue cheese crumbles

¼ C candied almonds (to make, heat ¼ c sliced almonds + 1 T white sugar on medium low heat until sugar dissolves and almonds brown. Stir frequently and watch closely)

1/2 Granny smith apple, diced

3 T The Tasteful Olive’s Mild or Medium Extra Virgin Olive Oil

1 T The Tasteful Olive’s Moscatel Barrel Aged Red wine vinegar

½-1 T The Tasteful Olive’s Granny Smith white balsamic vinegar

 

Place greens in a bowl. In a separate small bowl, whisk together oil, wine vinegar and balsamic vinegar until thick. Add salt and pepper, if desired. Toss greens with dressing. Garnish the salad with green onion, dried cranberries, blue cheese crumbles, apple, and candied almonds. Serve and enjoy!
