Colombian Potato Salad

2 lbs red potatoes (or combination of white, red, purple) cooked and cut into small chunks) *peel, if desired

3 large carrots, peeled and cut into small chunks…steam until slightly crisp, then cool & set aside

½ C chopped red onion

½ C chopped cilantro

3 -4 roma tomatoes, cut into small chunks

*optional-1/2 C chopped, cooked bacon pieces

Dressing:

¼ C The Tasteful Olive’s Invecchiato Moscato wine vinegar

2 T The Tasteful Olive’s Oregano balsamic vinegar

1/4 C The Tasteful Olive’s Roasted Onion & Cilantro infused olive oil

1 tsp The Tasteful Olive’s Himalayan Pink sea salt

Pepper to taste

 

Combine cooked potatoes, steamed carrots, onion, cilantro, tomatoes (& bacon, if using) in large bowl. In a small bowl, whisk together dressing ingredients until thick. Pour over potato salad and gently combine until mixed in. Chill & let flavors combine 2 hours or more before serving.
