Colombian Potato Salad
2 lb. red potatoes, cooked and cut into small chunks
3 large carrots, peeled and cut into small chunks (steam until slightly crisp, then cool and set aside)
1/2 c. chopped red onion
1/2 c. chopped cilantro
3-4 roma tomatoes, cut into small chunks
1/2 c. chopped, cooked bacon pieces (optional)
1/4 c. The Tasteful Olive Balsamico Bianco white balsamic vinegar
2 T. The Tasteful Olive Oregano white balsamic vinegar
1/4 c. The Tasteful Olive Onion & Cilantro infused olive oil
2 t. honey
1 t. Himalayan pink salt (available at The Tasteful Olive)
Pepper to taste
Combine cooked potatoes, steamed carrots, onion, cilantro, tomatoes (& bacon, if using) in large bowl. In a small bowl, whisk together the balsamic vinegars, olive oil, honey, salt, and pepper until thick. Pour over potato salad and gently combine until mixed in. Chill & let flavors combine 2 hours or more before serving.
