Elizabeth’s Raw Hummus
2 c. peeled zucchini, chopped
1 T. The Tasteful Olive medium intensity extra virgin olive oil
1 1/2 lemons, juiced
3/4 c. sesame seeds (hulled)
1/4 c. sundried tomatoes (optional)
3/4 t. pink Himalayan sea salt (available at The Tasteful Olive)
2 garlic cloves
1 t. paprika
Blend all ingredients in Vita-Mix (or a food processor). Serve this hummus with vegetables.
