Candied Jalapeno Chicken Skewers

1 pound boneless skinless chicken thighs

1 C candies jalapenos, minced, plus more for dipping and basting

2 large limes, juiced and zested. Approximately ¼ C juice

¼ C minced cilantro

Salt & pepper to taste

10 bamboo skewers soaked in water

 

Cut each thigh lengthwise in half.

In small bowl whisk together candied jalapenos, lime juice, lime zest cilantro, salt & pepper.

Add chicken to mixture coating evenly. Cover and place in refrigerator to marinate at least 2 hours. After marinated, skewer chicken and pre heat grill on high heat. Grill on low for 10 -12 minutes. Baste with additional candied jalapenos and serve immediately.
