Sundried Tomato Pesto
3 c. sundried tomatoes (not in oil)
1 c. The Tasteful Olive Garlic infused olive oil
1/4 c. The Tasteful Olive Traditional dark balsamic vinegar
Minced fresh herbs (oregano and parsley suggested), to taste
Sea salt and fresh ground pepper to taste, to taste
Place all ingredients into a food processor. Pulse until the mixture has the consistency of a pesto. Lightly toss with one pound cooked pasta (cooked according to package instructions) or serve with crackers as a spread.
