Easy Pesto
1/2 c. The Tasteful Olive mild or medium intensity extra virgin olive oil
4 cloves garlic
2 T. pine nuts
1/4 t. sea salt
2 c. fresh basil
1/4 c. mayonnaise
1/2 c. grated Parmesan cheese
Process oil, garlic, nuts and salt in blender or food processor. Add basil and mayonnaise and pulse to combine. Add the Parmesan last and pulse to combine.
Cook's note: Pesto is good to toss with warm pasta, as a spread on toasted baquette slices with added tomato slices, or as a dip for crackers and chips.
