Rhubarb Strawberry Cobbler with Blood Orange Olive Oil

Filling ingredients:

1 pint strawberries, halved (quartered if large)

2 cups rhubarb (about 6 stalks), sliced

1/2 c. sugar

1 T. cornstarch

1/4 t.cinnamon

1/4 t. ground ginger

1/4 t. nutmeg 

1 T. The Tasteful Olive Strawberry dark balsamic vinegar

Topping ingredients:

1 1/2 c. all-purpose flour

1/4 c. sugar

1/2 t. baking soda

1 1/2 t. baking powder

1/2 t. salt

2 T. The Tasteful Olive Blood Orange infused extra virgin olive oil

1 c. buttermilk

Preheat the oven to 350. Mix all the filling ingredients together in a large bowl and let sit for 20 minutes. Pour into a 9x9” pan.

For the topping, mix the dry ingredients, then stir in the olive oil and buttermilk until incorporated. Spoon over the filling and bake at 350 for 40-50 minutes.
