Rhubarb Strawberry Cobbler

Ingredients:

Filling:

1 pints strawberries

2 cups rhubarb (about 6 sticks)

½ cup sugar

1 tbsp cornstarch

1/4 tsp cinnamon, ginger, nutmeg (optional)

1 tbsp The Tasteful Olive Strawberry Balsamic 

Topping:

1 ½ cup flour

¼ cup sugar

½ tsp baking soda

1 ½ tsp baking powder

½ tsp salt

2 tbsp Blood Orange Olive Oil from The Tasteful Olive

1 cup buttermilk

 

Instructions:

Mix in all the filling ingredients and let sit for 20 minutes. Pour into a 9x9” pan.

Prepare the topping. Mix the dry ingredients, then stir in the buttermilk and olive oil until incorporated. Spoon over the filling and bake at 350 for 40-50 minutes.

 

Suggestion: add 1 tablespoon of chocolate Balsamic vinegar in the filling for a more interesting flavor profile.
