Hawaiian Style Chicken
2 lb. boneless, skinless chicken breasts or thighs, cut into 1” cubes
3 T. The Tasteful Olive Baklouti Green Chili pressato extra virgin olive oil
½ c. pineapple juice
¼ c. low sodium soy sauce
¼ c. The Tasteful Olive Strawberry dark balsamic vinegar
1 t. ground ginger
1 ½ t. minced garlic
2 t. Himalayan sea salt (available at The Tasteful Olive)
1 t. black pepper
2 T. cornstarch
Thinly sliced green onions, for garnish
Jasmine rice, for serving
In a large skillet, saute chicken over medium heat until almost fully cooked. While the chicken is sauteing, make the sauce. Combine the pineapple juice, soy sauce, balsamic vinegar, ginger, garlic, salt, pepper, and cornstarch in a medium bowl and whisk to combine. When the chicken is almost fully cooked, turn the heat down to medium low, add the sauce, and simmer for 3-5 minutes until the sauce has thickened and glazed the chicken. Serve over jasmine rice.
