Brussels Sprouts with Chorizo 

1 lb. brussels sprouts, cleaned, trimmed, and cut in half

4 oz. chorizo, diced

3 T. The Tasteful Olive Chipotle infused olive oil

1 t. paprika

1/2 t. Himalayan pink salt (available at The Tasteful Olive)                               

1/2 t. pepper    

In a small pot, steam brussels sprouts for 8 min. or until they begin to soften slightly. While brussels sprouts are steaming, sauté Chorizo in dry pan at medium heat to render out fat and crisp the chorizo. After steamed, add brussels sprouts to chorizo (cut side down) and add the olive oil. Turn heat to medium high and saute for 5 minutes or until brussels sprouts begin to brown on the bottom. Dust with paprika, salt and pepper and serve immediately. Drizzle with the oil from the pan.
