½ c The Tasteful Olive’s EVOO
1 c oat flour
¾ c coconut milk (full fat canned)
2 t baking powder
1 t vanilla extract
2 c black berries
1 c brown rice flour
½ c dark chocolate chips (optional)
¾ c Coconut Palm Sugar
2 eggs
¾ cups raw cacao powder (or cocoa powder)
1 T The Tasteful Olive Blackberry Ginger balsamic vinegar
Directions:
Preheat oven to 350o F. Lightly coat 9”x9” pan with baking oil or parchment paper. In a large mixing bowl, whisk together eggs, olive oil, coconut milk, vanilla extract, and balsamic vinegar. In separate bowl, whisk together brown rice flower, oat flower, sugar, cacao powder, and baking powder. Pour wet mixture into dry mixture and mix until combined. Fold in fresh blackberries (and chocolate chips if you’re using them). Pour batter into prepared baking dish and bake for 42-50 minutes. Wait 15 minutes before cutting and serving. Enjoy!
