Blackberry Brownies
2 large eggs
1/2 c. The Tasteful Olive mild extra virgin olive oil
3/4 c. full fat, canned coconut milk
1 t. vanilla extract
1 T. The Tasteful Olive Blackberry Ginger balsamic vinegar
1 c. brown rice flour
1 c. oat flour
3/4 c. coconut palm sugar
3/4 c. raw cacao powder (or cocoa powder)
2 t. baking powder
2 c. blackberries
1/2 c. dark chocolate chips (optional)
Directions:
Preheat oven to 350. Lightly coat 9x9 pan with baking oil or parchment paper. In a large mixing bowl, whisk together eggs, olive oil, coconut milk, vanilla extract, and balsamic vinegar. In a separate large mixing bowl, whisk together brown rice flower, oat flower, sugar, cacao powder, and baking powder. Pour wet mixture into dry mixture and mix until combined. Fold in fresh blackberries (and chocolate chips if you’re using them). Pour batter into prepared baking dish and bake for 42-50 minutes. Wait 15 minutes before cutting and serving. Enjoy!
