Quick Farro Grain Bowl

1 can garbanzo beans, drained and rinsed

2 small sweet potatoes, peeled, and diced into 1/2" cubes

1/3 c. + 5 1/2 T. The Tasteful Olive Italian Lemon infused olive oil, divided

3/4 t. pink Himalayan sea salt (available at The Tasteful Olive), plus more, to taste

3/4 t. black pepper, plus more, to taste

1 t. dried oregano

1 1/2 t. garlic powder, divided

1 c. farro

1 bunch kale, stems removed, thinly sliced or chopped

4 shallots, thinly sliced

3 T. The Tasteful Olive Champagne wine vinegar

2 T. honey

1 pinch red pepper flakes

1/2 c. pepitas (can also use pistachios, roughly chopped)

6 oz. feta cheese, crumbled

Fleur de Sel, for garnish

Preheat the oven to 450. Line a large sheet pan with parchment paper. Drain and rinse the garbanzo beans, then pat them dry with a towel. On the prepared baking sheet combine the garbanzo beans and sweet potatoes. Drizzle with 1 1/2 T. of the olive oil then season with salt, pepper, oregano, and garlic powder and toss to combine. Roast in the oven for 20 minutes.

While the vegetables roast, cook the farro according to the package instructions. Once cooked, drain and place in a large bowl. 

Place the kale on another large baking sheet and drizzle with 1 T. olive oil then season with salt and pepper and toss to combine. Add to the oven with the vegetables and continue cooking the vegetables and kale for 10 minutes. 

While the vegetables finish roasting, saute the shallots until deeply golden brown in 3 T. of olive oil over medium to medium-high heat (approximately 7-9 minutes). Remove the shallots to a paper towel lined plate and season with a pinch of salt.

For the dressing, place 1/3 c. olive oil, vinegar, honey, red pepper flakes, the remaining 1/2 t. garlic powder, salt, and pepper in a container with a tight fitting lid and shake to combine.

Add the sweet potatoes, garbanzo beans, kale, shallots, pepitas, and feta cheese to the bowl with the farro. Pour the dressing over the top and toss gently to combine. Garnish individual servings with fleur de sel as desired.
