Easy Crock Pot Herb Roasted Potatoes
1 lb. baby red potatoes or (can also use yukon gold or a combination)
1/4 c. water
1 T. Herbs de Provence spice blend (available at The Tasteful Olive)
2 T. The Tasteful Olive mild intensity extra virgin olive oil
2 T. The Tasteful Olive Rosemary pressato olive oil (can also use Herbs de Provence infused olive oil)
Salt and pepper, to taste
Slice potatoes in quarters (or halves if they are small) and place into crock pot. Add water and sprinkle potatoes with spices. Add in olive oils. Stir to combine. Cook on high for approximately 3 hours until fork tender.
Cook's note: If you want a crispier finish, place potatoes on a baking sheet and broil for a few minutes until desired doneness.
