Creamy Ham and Wild Rice Soup
1 medium onion, diced
2 cloves garlic, minced or grated
1/4 c. + 2 T. The Tasteful Olive Basil pressato olive oil
1/2 c. flour
4 c. chicken broth
2 celery ribs, diced
2 large carrots, diced
2 c. cooked wild rice
2 c. milk
2 c. cooked ham, diced
1 t. dried parsley
Salt & Pepper to taste
In a large pot, saute onion & garlic in basil olive oil until transparent. Add in flour and cook until bubbly. Gradually add broth, stirring constantly. Bring to a boil for 1 minute. Reduce heat. Add celery, carrots, wild rice, ham, milk & spices. Simmer at least 20 minutes. Drizzle Basil olive oil on top before serving.
