Classic Caesar Salad 

2 large pasteurized egg yolks

1/2 garlic clove, peeled

1/3 c. grated parmesan cheese, plus more for serving (if desired)

3 T. lemon juice                                      

1 anchovy filet

1/2 t. salt                                                  

Pepper, to taste

1/2 t. dijon mustard                              

1/2 c. The Tasteful Olive medium intensity unflavored extra virgin olive oil

3 hearts Romaine lettuce, washed, dried and roughly chopped or left whole

1 c. croutons

Place all egg yolks, garlic, parmesan, lemon juice, anchovy, salt, pepper, and dijon into the container of a blender or food processor in the order listed and secure lid. Turn machine on and process for 20 seconds. Drizzle dressing over lettuce, add croutons and more grated parmesan cheese.
