Tuscan Bean & Sausage Soup
1 pound pre-cooked chicken sausage, diced
1 small onion, diced
2 cloves garlic, minced or grated
2 cans tomatoes, undrained
2 cans black beans, undrained
2 cans Northern White beans, undrained
4 C beef broth
2 tsp dried basil
2 T The Tasteful Olive's Tuscan Herb olive oil
1 T The Tasteful Olive's Sicilian Lemon balsamic vinegar
Heat olive oil in medium sized pan over medium heat. Brown sausage, onion and garlic for approx 5 min. Add the balsamic vinegar and cook another 2-3 min. Transfer to crock pot. Stir in remaining ingredients and cook on low 6-8 hours or high 3-4 hours. Drizzle Tuscan Herb olive oil on top before serving. Garnish with fresh parmesan cheese.
