Teriyaki Ginger Pork Loin

Ingredients:                                   Serves:

1 2-lb pork loin

1 clove garlic, minced

1/4 C TRADITIONAL BALSAMIC VINEGAR from The Tasteful Olive

1 T of a teriyaki ginger rub spice blend

2 scallions, chopped

Rice pilaf, prepared

Directions:
In large zip-lock bag combine all ingredients but the pork and shake to mix. Add the whole pork loin and marinate it for 8 hours or overnight.

Preheat oven to 425 degrees. Roast the pork loin for about 40-45 minutes or until internal meat temperature reaches 160 degrees. Let rest 15 minutes before serving.

While roasting, straing the left over marinade into a small sauce pot and bring to simmer. Reduce by half. Pour reduced marinade over the cooked pork before serving.

Excellent served with rice pilaf.
