Rosemary & Strawberry balsamic marinated pork roast
Ingredients: Serves:
1/4 C The Tasteful Olive’s medium intensity EVOO
1/4 C The Tasteful Olive’s Strawberry balsamic vinegar
1 tsp soy sauce
2 tsp granulated garlic
2 T dried shallots (Penzy's air dried shallots)
1 tsp red pepper flakes
1 T dried rosemary (optional, to taste)
1.5 lbs pork sirloin roast
Directions:
Preheat oven to 300F. Either in a blender (recommended) or whisking into a medium bowl, combine all marinade ingredients so that it appears the liquids have melded together and the dry ingredients hang in the mixture. Place marinade with the pork into a spill-proof container and evenly coat the pork, making sure all sides are hugged by the marinade. Let pork marinate in the refrigerator for between 1-5 hours. Turn about half way through so all sides get equal love from the marinade. Place pork onto a cookie sheet lined with parchment paper. Place into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C)
